Birthday Cake Pancakes Recipe
These are a great source of protein and keep your calorie count low! Pair them with some yogurt or other types of protein or fiber and you’ve got a breakfast of champions!
Ingredients:
1 scoop vanilla protein powder
1 egg
½ banana, mashed
½ tsp pure vanilla extract
1 pinch sea salt
½ cup chopped strawberries
1 Tablespoon hemp hearts
½ Tablespoon coconut oil
Start by heating up a small or medium sized skillet on your stovetop and melt the coconut oil while you mix up the rest of the ingredients. In a bowl, mix together protein powder egg, banana, vanilla, and salt with a fork. Bring together just until mixed. Fold in the strawberries and hemp hearts. When the skillet is hot, add ¼ cup of batter at a time to the oiled pan. Cook on one side until bubbles have risen to the top. Flip carefully, then cook the other side until golden brown. Serves 1.
Alternatives:
Coconut oil is the best to use for this recipe as it has a slightly sweeter taste to it but you can replace it with other types of oils like olive oil or avocado oil.
Storage:
Pancakes can be stored in the fridge for up to a week and in the freezer for several months! Making extra can be a great way to keep some good food on hand for snacks or an easy breakfast. Warm up pancakes quickly in a warm pan or by popping them in the toaster for a few moments.
